Before yesterday, I never thought about making my own granola because it’s not something I typically eat a lot of. However, as colon cancer rises across the United States, my husband has been on this major fiber kick. As a result, both of us are trying to up our fiber intake in any way we can. For me, being the grazer that I am, that meant not just finding high fiber meals, but snacks as well. Honestly, I don’t know why I waited so long to try this because I kept going back for handful after handful of it! It’s one of the most versatile recipes that you can adjust to your liking and comes out tasting SO good. This is the BEST recipe for honey nut cinnamon granola!

Honey Nut Cinnamon granola
Ingredients
4 cups of oatmeal
2 cups nuts of choice
(I used almonds, walnuts, pistachios, chia seeds, and flaxseed)
2 tbsp cinnamon
3/4 cup of honey
1/4 cup of maple syrup
1 cup of chocolate chips
Splash of vanilla (optional)
Instructions
1. Preheat oven to 350 degrees and line a baking sheet with parchment paper, or lightly brush a glass baking dish with olive oil.
2. In a large bowl, mix together all ingredients until they start to form clusters or everything has a sticky sheen from the honey and syrup.
3. Spread evenly on the prepared baking sheet or dish and bake in the oven for 20 minutes.
4. Mix, allow to cool, then nibble away!
